Creamy hamburger pasta

This is the ultimate ... "I have no food in the house!" dinner. This is very similar to the creamy chicken pasta recipe, but with beef and cream of mushroom soup. The picture is from today, in my Tupperware container, so it's not a fresh off the stove picture.

Give it a try!!!

Ingredients:

2 hamburger patties
1/2 cup chopped onion
salt and pepper to taste
1/2 bag frozen vegetables
1 can cream of mushroom soup
2/3 cup sour cream
2/3 cup milk

Directions:

Cook the hamburger patties in a little bit of water with some onion. Drain. (I strained it through my strainer and then put it back in the pan.) Cook pasta at the same time.

Add the milk and sour cream to the pan with the hamburger and onion. Cook until heated through.

Add the vegetables to the mixture and crumble up the hamburger patties.

Drain pasta and add it to the creamy mixture.

Serve with salad and bread!

Chicken burritos and homemade chips!

This is a really simple and fast meal, but it's always nice to have some of those, right?

Ingredients:

1 chicken breast, cooked and shredded
1/2 onion, chopped
1/2 green pepper, cut in long strips
1 can black beans
1can refried beans
10 tortillas

Directions:

Place the cooked and shredded chicken, onion, green pepper, some black beans, and some refried beans in a tortilla. Warm in the microwave for about 30 seconds. Remove from microwave and add your favorite toppings. (guacamole, sour cream, cheese, salsa)

To make the chips, use a pizza cutter to cut triangle shapes out of the tortillas. Spray a cookie sheet with cooking spray. Place the chips on the cookie sheet. Spray the tops of the chips with cooking spray. Place in the oven and broil on high for 1 minute, turn the chips over, and broil for 1 more minute. Be careful and watch the chips, I thought I could leave one batch in there for a second while I finished something else up, no way...they were toast!!


This picture is compliments of my cute husband. He wraps his burritos so nicely, and his plate looked very artful. I thought so, at least. I asked him if he'd take a picture, and even though he was starving and didn't want to ... he relented. Bless his heart.

A new cook in the kitchen!

Okay, obviously we have a new member to the cooking site! Welcome, Becky!!! You might have been reading thinking, "Um...Chrissy's husband is not diabetic, and unless it's been a SUPER long time since I've talked with her, I don't think she has two kids."

Have no fear, there's now two crazy people loading pictures and recipes. So, twice the fun!

Sunday Morning Sweet Rolls

Okay, I made these the other day and our family is divided on them. I am an all-out smotherer of cinnamon rolls and say the more frosting the better. My husband, on the other hand, is more health-conscious and thinks these sweet rolls are a perfect amount of sweet. So, with that said:

1 Cup Brown Sugar
1 Teaspoon Cinnamon
1 Cup Butter
About18 Rhodes frozen bread rolls

The night before, put sugar, butter and cinnamon in a saucepan and bring to a boil.
Cook for 4 minutes.
Place frozen rolls in a Bundt pan, pour sugar mixture over the rolls.
Leave on kitchen counter overnight.
In the morning, bake in pre-heated oven, 350 degrees, for 20-25 minutes.

*The best part of these is how truly simple and easy they are. They're perfect if you have company and everything is hectic and such.
**I only have 2 kids, and one is still working on "chewing" rice cereal, so I halved this recipe and it worked just fine.

Even more kiddie Mac-n-Cheese

My 2-year old sometimes needs "motivation" to eat her meal. This is more of an idea than a new recipe:

Make your favorite Mac-n-Cheese and vegetable.
Put it in these fancy-dancy cupcake liners.
Top with cut-out cheese shapes (kids like to help with this part)
Broil for a couple of minutes.
Wa-lah!

Slow Cooker Chocolate Mud Cake

This is an easier version of those chocolate cakes with liquid centers. Just put it in the crock and let the crock do it's magic.

What's in it:
1 cup flour
2 teaspoons baking powder
6 tablespoons butter
2 ounces semi-sweet chocolate (or 1/3 cup of chocolate chips)
1 cup sugar (2/3 cup, and 1/3 cup separated)
3 tablespoons cocoa PLUS 1/3 cup cocoa (for later)
1 tablespoon vanilla
1/4 teaspoon salt
1/3 cup milk
1 egg yolk
1/3 cup brown sugar
1 1/2 cups hot water

Now:
1. Spray the inside of your crock pot with cooking spray
2. In a large bowl, melt the butter & chocolate
3. Whisk in 2/3 cups of the sugar, 3 tablespoons of the cocoa, and all of the vanilla, salt, milk and egg. Mix.
4. Add flour & baking powder.
5. Pour into the crock pot and even out.
6. Whisk together the remaining sugar, cocoa and hot water until sugar is dissolved.
7. Pour over batter.
8. Cover and cook on high 1-2 hours (depending on size of crock pot-it's done when the cake pulls from the sides) *note: when checking cake, try not to let the steam collected on the lid drip onto the cake
9. When done, remove lid and let sit for 25 minutes.
10. Serve with whipped topping or ice cream.
11. Let it melt in your mouth.

Crepes

This was my saving grace for my husband's birthday a couple weeks ago. I found this recipe from Krafty Katrina and I want to make them again as I'm typing this. My husband is diabetic, and although this recipe is not sugar-free, it is much better than waffles drenched in syrup or cinnamon rolls smothered in frosting (although I love both of those options). I had NEVER made crepes before this attempt and they came out perfectly. We ate them all! Crepes are easier than they seem. They're kind of like good lookin' guys, intimidating, but undeservedly so.

To the recipe:
1 1/2 cups flour
1 tbsp. sugar
1/2 tsp. baking powder
1/2 tsp. salt
2 cups milk
2 tbsp. butter, melted
1/2 tsp. vanilla
2 eggs
1. Mix flour, sugar, baking powder and salt in medium bowl.
Stir in remaining ingredients.
Beat with hand beater until smooth.
2. Lightly butter 6-8 inch skillet.
Heat over medium heat until bubbly.
3. For each crepe, pour scant 1/4 cup batter into skillet.
Immediately rotate skillet until thin layer of batter covers bottom.
Cook until lights brown.
Run wide spatula around edge to loosen; turn and cook other side
until light brown.
Repeat with remaining batter, buttering skillet as needed.
4. Stack crepes, keep covered.
If desired, spread applesauce, sweetened strawberries, jelly, or jam thinly over each warm crepe; roll up. (Be sure to fill crepes so when rolled the more attractive side is on the outside.) Sprinkle with powdered sugar if desired.
Unfilled crepes can be wrapped airtight and frozen up to 2 months.

Best French Toast Ever

This is my favorite French Toast ever! I've made it twice since discovering it and it has been a hit both times. It makes other French Toast look mooshy and boring. The consistency is awesome and the flavor is great AND you only need 1 egg (which was helpful this last weekend).



Best French Toast

8 slices bread

2 T. unsalted butter

1 c. milk

1 egg

2 T. sugar

2 t. vanilla

3/4 t. cinnamon

1/4 t. salt

1/2 c. flour


Adjust oven rack to middle position and heat oven to 200.

Arrange the bread on a wire rack set over a baking sheet and bake until slightly dry, about 15 minutes.

While the bread is in the oven, melt 2 T. of butter and whisk it together with the milk, egg, sugar, vanilla, cinnamon, & salt in a medium bowl.

Slowly whisk in the flour until smooth.Transfer 1 or 2 pieces of bread at a time from the oven into the batter & soak both sides.

Cook on a nonstick skillet or griddle until done, about 2 1/2 minutes per side.

Turkey and Cheese Roll-Ups

My favorite school lunch growing up was the Ham and Cheese Roll-up day. This weekend I decided to make my own roll-ups, but all we had at home was turkey. They were really good!!!


Ingredients:

Home-made bread dough (click here for the recipe)
4 slices turkey lunchmeat
1/2 cup shredded cheese
Cooking spray

Directions:

Make the bread dough, up to the point where you let it rise. After it has risen, divide it into two halves. One half will make 2 roll-ups.

Roll each half into a rectangle. Place lunch meat on the dough, and then sprinkle with cheese. Roll the dough to close it, starting with one of the short ends. Roll all the way up and pinch the sides to seal every edge.

Make 3-4 slits on top of the roll-up to release a little air as it cooks.

Spray tops with cooking spray.

Cook in a 425 degree oven for 20 minutes or until golden brown. (Cheese may ooze out of the slits a little.)

Mostaccioli with Beef

This is a recipe that I forget about, but it's really fast and simple. And the ingredients are very inexpensive! Always a plus.

Ingredients:

1 1/2 cups uncooked mostaccioli pasta (Any kind of pasta works fine)
1 pound ground beef
1 medium onion, chopped (1/2 cup)
2 t fresh oregano OR 1/2 t dried oregano
1/4 t salt
1/8 t nutmeg
1 can (8 ounces) tomato sauce
1 clove garlic, finely chopped
1 T margarine
2 T all-purpose flour
Dash of ground nutmeg
1 1/2 cups milk
1/4 cup grated Romano cheese (You can use any kind of cheese, and I don't measure it. I just put it on top of the casserole until it looks cheesy and good. I'm sure I use more than 1/4 cup.)

Directions:

Heat oven to 350.

Cook and drain pasta as directed, omit salt.

Cook beef and onion in skillet over medium heat, stirring occasionally until beef is brown; drain.

Stir in oregano, salt, cinnamon, 1/8 t nutmeg, tomato sauce and garlic.

Alternate layers of pasta and beef mixture in ungreased 2-quart casserole.

(If you're making this the day before or anytime ahead, stop here. Continue right before you're ready to bake and eat.)

Topping:

Melt margarine in saucepan over low heat.

Stir in flour and dash of nutmeg.

Cook over low heat, stirring constantly, until smooth and bubbly.

Remove from heat, and stir in milk. Heat to boiling, stirring constantly.

Boil and stir one minute.

Spoon sauce over pasta and beef mixture.

Bake uncovered for about 30 minutes or until bubbly, add cheese on top and cook until melted and yummy. (About 5 more minutes)

Quick Fudge

Another recipe from Grandma.


Ingredients:

2/3 C evaporated milk (1 small can)

1 2/3 C sugar

1 ½ C miniature marshmallows

1 C chocolate chips

1 tsp vanilla

1 pinch salt

1 T butter plus butter to grease pan or dish


Directions:

Prepare a buttered pan or dish to put the fudge in to cool. It’s about right for an 8x8 pan.

Mix milk and sugar in heavy saucepan. Heat over medium high heat, stirring slowly but constantly, until mixture comes to a full boil. Keep it at a boil for 4 minutes, stirring constantly (or it will scorch).

Add marshmallows, stir, and let come to a boil again, stirring constantly. Boil 1 minute.

Add chocolate chips and stir vigorously, removing from heat. Quickly add vanilla and salt. Stir. Add 1T butter and stir quickly until the butter is melted. Pour immediately into dish and spread evenly. (It’s important to work quickly from the time you add the chocolate chips until spread in pan so that it doesn’t thicken too quickly before you get it spread.)

Lick the spoon and pan when cool enough – that’s the best part!

Goulasche!

This is another of Bec's recipes. I haven't tried it, but they love it and it sounds good!


Ingredients:

1 package instant Mac & Cheese

1 package Ramen Noodles

2 hotdogs


Directions:

Cook mac & cheese according to box.

Add cut-up hotdogs.

Add the Ramen noodles once the macaroni is soft.

Let Ramen become soft (~2-3 minutes).

Drain.

Add butter to noodle mixture until melted.

Then add milk, cheese package, and ½ seasoning from Ramen.

Wahlah!

Dinner rolls

This is my grandma's recipe for rolls. I have never tried making them, but they sure sound good! It looks like a pretty large recipe, so if you're cooking for only a few like we do, maybe cut it in half.


Ingredients:

6 eggs well beaten

1 cup shortening - melted

½ cup sugar

2 tsp salt

2 pkg dry yeast

2½ cup water

9 cup flour



Directions:

Dissolve two packages yeast in 1/2 cup warm water

Mix together eggs, melted shortening, sugar, and salt. Add this

mixture to yeast mixture with 2 cups water, then add 8 cups of flour.

Mix ingredients with large spoon. Let raise until double (about an

hour), and stir down - twice.

Add 1 cup flour before rolling out. Roll out to approximately 1/2 inch

thickness, cut in circles, fold in half and pinch together. Let rise

to about double

Bake at 400° about 7 minutes or until light brown.

Very light dinner rolls if you are patient enough to let them rise.

Banana Bread

Another recipe from a sister, this time it's Jen's recipe for banana bread. Banana bread is always great, but adding chocolate chips just makes it divine!!!

Ingredients:

5 c. flour

2 c. sugar

7 tsp. baking powder

6 Tbsp. oil

1 ¼ c. milk

2 eggs

2 b. mashed bananas

Nuts (optional)

Chocolate chips (also good)

Directions:

Mix ingredients and beat ½ minute. Pour in greased pans. Bake at 350° for 45 minutes.


Cranberry Bread

This recipe I got from one of my other sisters, Kathy. It's a great recipe, and a really pretty bread to give away as a gift.
Since the cranberries are red, it's kind of a nice Valentine's idea.

Ingredients:

2 c. sugar

6 Tbsp. butter

4 c. flour

4 tsp. baking powder

½ tsp. salt

4 c. raw cranberries

2 c. milk

Directions:

Cream butter and sugar. Add other ingredients except cranberries. Mix well. Stir in cranberries. Bake at 350° for 30-40 minutes.

Banana Pancakes

Side note: This recipe is from my awesome sister, Bec. It's a DELICIOUS recipe, so even though the picture doesn't look super great. They're really good. They don't look so pretty as you're making them, but your house smells like you're baking banana bread and they taste amazing! We have had them for breakfast, but they're also a really good and fast dinner.

Ingredients:


1 cup oats
1 cup flour
1/2 cup brown sugar
2 t baking powder
1/2 t baking soda
1 t cinnamon
3/4 cup sour cream (or banana flavored yogurt)
3/4 cup milk
2 eggs
1 t vanilla
2 mashed bananas
1/2 stick melted butter

Directions:

Mix dry ingredients. Set aside.

Mix all wet ingredients except for butter and bananas. Add butter and bananas and mix well. Add dry ingredients to wet.

Pour batter by 1/2 cup fulls onto hot skillet.

****I used about 1/3 stick butter and it was still really yummy. Also, it calls for whole milk, but I have always just used whatever I had in the house. I've never tried the banana yogurt, just because I always have sour cream. However, Becky loves it with banana yogurt. You can also add mini chocolate chips to make them a little sweeter breakfast treat!

Chicken salad with apples


This is an easy dinner, and the combination of veggies and fruits is really good!

Ingredients:

Canned chicken or cooked and shredded chicken
1 apple
1/2 avocado
8 small cherry tomatoes
1/8 cup chopped green peppers
Romaine lettuce
Thousand Island dressing

Directions:

Combine first 5 ingredients and sprinkle over romaine lettuce. Top with dressing. I also added some cheese on top and that was a good addition.

Chicken Salad Sandwiches


Another dark picture, I'm not sure what's wrong with my camera. Anyhow, this chicken salad is really easy and you can vary it a lot.

Ingredients:

1/2 chopped green pepper, chopped VERY finely
1 carrots, chopped VERY finely
1 boneless and skinless chicken breast, cooked and shredded
Miracle Whip to taste
salt
pepper

Directions:

Cook chicken, set aside and shred when cooled.

Chop veggies. (Add whatever you like, cucumber is great, celery, cabbage, olives)

Add chicken to veggies and stir in Miracle Whip.

Served on homemade bread, it was delicious! It's always great in croissants, too.

Homemade Bread


I know this picture is awful, but this homemade bread is delicious, and SO fast and easy.

Ingredients:

1 package rapid rise yeast
1 1/4 cup warm water
1 T sugar
1/2 t salt
3-4 cups flour

Directions:

Dissolve yeast in warm water until bubbly.

Add sugar and salt and stir to combine.

Add flour.

Let rise for 1 hour, and then bake at 425 for 20 minutes.

(This is a French bread recipe, so usually I form it like a long skinny French loaf, and then cut slits in the top. However the picture shows it as a regular loaf. It's great either way. If you do it like a regular loaf, cook for 30 minutes.)

Baked Beans

Grandma’s Baked Beans

Ingredients:

Large can of beans in dish

Coarse chopped onion

Bacon or little sausages

1 T. butter

Directions:

Cook meat and add onions until onions are translucent. Add ½ cup ketchup, 2 T. brown sugar, 1 T. cider vinegar and 1 T. molasses. Meat mixture with beans and stir slowly. In oven uncovered 45 minutes at 350. Stir at 20 minutes.

Pizza Sauce


Ingredients:

  • 2 ripe tomatoes
  • 1 clove garlic
  • 1 tablespoon chopped fresh basil
  • 1 pinch ground cinnamon
  • 1 teaspoon salt
  • 1 pinch ground black pepper
  • 1/4 teaspoon white sugar
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil
  • 1 teaspoon chopped fresh parsley
  1. In a food processor, combine the tomatoes, garlic, basil, cinnamon, salt, pepper, sugar, oregano, oil and parsley. Blend without liquefying - should remain a little chunky.

Twice baked potatoes

Ingredients:

3 hot baked potatoes split lengthwise

½ cup sour cream

2 T butter or margarine

1 cup shredded cheddar cheese

Directions:

Scoop out insides of potatoes. Mash potatoes with sour cream and butter. Stir in cheese. Spoon into shells.

Bake at 400 for 20 minutes until hot. Top with remaining cheese. Bake 2 minutes until cheese melts.

Cheesey Potatoes

We always called these "cheesey potatoes", but a lot of people call them funeral potatoes. Whichever is the case, they're good.


Ingredients:

Bag and ½ hash browns (stringy or cubed)

1 can cream of chicken soup

Onion

Canned or regular milk (3/4 of can of soup worth of milk)

1 bag grated cheese

½ pkg. cream cheese (8 oz)

½ sour cream


Directions:

Heat soup, milk, cream cheese – fold into potatoes and cheese. Add salt and pepper. Bake 30-45 minutes with foil, sprinkle with cheese and bake 15 minutes longer.

Homemade biscuits

Mom’s homemade biscuits


Ingredients:

2 cups flour

3 t. baking powder

½ t. salt

1/3 cup shortening

7/8 cup milk (1 cup less 2T)


Directions:

Stir first 3 well, last 2 quickly with fork. (This is serious, stir quick!)

Cook 450-500 for 12-15 minutes. Check them after 10.

Zucchini Bread

This is awesome bread. Add in some mini chocolate chips and it makes it even better, and sweet!

Ingredients:

1 ½ c. flour

1 t. cinnamon

½ t. baking soda

¼ t. baking powder

¼ t. salt

¼ t. nutmeg

1 cup sugar

1 cup zucchini

¼ c. cooking oil

1 egg

1 t. shredded lemon peel


Directions:

Grease 8x4x2. Combine flour, cinnamon, soda, powder, salt and nutmeg.

Combine sugar, zucchini, oil, egg, lemon.

Add flour mix to other.

Stir until moist.

Put in pan at 350 for 55-60 minutes, tooth pick will be clean.

Cool 10 minutes. (16 servings for 1 loaf)

Breakfast casserole

Mom’s breakfast casserole

Ingredients:

6 beaten eggs

6 pieces bread, cubed

1 t. dry mustard, or regular

½ t. salt

1 cup cheddar cheese

1 lb. turkey sausage

½ t. pepper

2 cup milk


Directions:

Bake 350 for 45-60 minutes

Creamed eggs with toast

I had this recipe growing up every year on Easter morning. It's a great way to use up some of your hard boiled eggs, and it's a great breakfast! I know it sounds a little weird serving it over toast, but seriously ... it's great!


Ingredients:

Cornstarch, and ingredients for white sauce on the back of the box

Milk

Butter

Salt

Pepper

Hard boiled eggs

Bacon bits

Toast


Directions:

Make white sauce on cornstarch box.

Heat cornstarch, milk, butter on skillet.
Add salt and pepper. Add cut up hard boiled eggs. Sprinkle in bacon bits. Save out one egg to slice on top.

Pumpkin Bread


This is a great bread for any time of the year. Not just around pumpkin season. It's canned pumpkin that you use, so ... make it tonight! Sometimes I add chocolate chips to make it a sweet bread and kind of a nice treat!

INGREDIENTS

  • 5/8 cup warm water
  • 1/2 cup canned pumpkin puree
  • 1/4 cup margarine
  • 1/4 cup nonfat dry milk powder
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon ground nutmeg
  • 3/4 teaspoon salt
  • 1/8 teaspoon ground ginger
  • 2 3/4 cups bread flour
  • 2 1/4 teaspoons active dry yeast

DIRECTIONS

  1. Place ingredients in bread machine pan in the order suggested by the manufacturer. Select basic setting. Start.
  2. To bake bread in oven: shape dough and place in a greased loaf pan. Allow to rise in a warm spot until doubled in size. Bake in a preheated 350 degrees F (175 degrees C) oven for 35 to 45 minutes or until a thermometer inserted in the center of the loaf reads 200 degrees F (95 degrees C).

Watermelon Icy

Watermelon Icy (Candy’s recipe)


Another recipe from a friend. This is a very refreshing and light drink.

Ingredients:

1 ½ lbs ripe watermelon (rind & seeds removed, cut into chunks)

Juice of 2 limes

6 ice cubes (If you freeze watermelon, reduce ice as needed)

Sweeten to taste (stevia or sugar)


Directions:

Place watermelon, sweetener, lime juice and ice in blender. Puree until smooth.

If mixture is too thick, add a touch of very cold water until the smoothie blends well.

Adjust taste by adding a little more sweetener or lime juice.

Serve in tall frosty glasses with a slice of lime.

Serves 4

Taco Loco Dip

Taco Loco Dip (Corrina’s recipe)


I got this recipe from a friend, and it's delicious and really fun to have at a party or game night.


Ingredients:

1 cup sour cream

2 Tbsp. Taco Seasoning Mix

1 tomato, chopped

1 cup finely shredded lettuce

1 cup shredded cheese

1/3 cup black olives


Directions:

Mix sour cream and seasoning mix in medium bowl. Add tomatoes, lettuce and ¾ cup of cheese.

Spoon into shallow serving dish, top with remaining cheese.

Sprinkle with olives. Serve with crackers or tortilla chips.

Makes 1-1/2 cups dip or 12 servings

EDIBLE SERVING BOWL:

Place 12 inch flour tortilla on top of a 6 inch microwaveable drinking glass. Microwave on high for 1 minute. (Tortilla will soften and drape over top of glass to resemble and inverted bowl.) Let stand until tortilla is firm. When ready to serve, invert tortilla bowl onto serving plate: fill with prepared dip.

Avocado Shrimp Dinner

This is a great recipe. It does have quite a bit of avocado in it, so if you're a fan like me, you'll love it. If you're not such an avocado fan, it may be a little strong for you.

Ingredients:

  • 3 avocados
  • 1 (14.5 ounce) can chicken broth
  • 2 cups milk
  • 1 teaspoon lemon juice
  • 2 teaspoons minced onion
  • 1/2 pound cooked fresh shrimp
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  1. Cut avocados in half. Discard pits. Spoon meat into a small bowl.
  2. Chop cooked shrimp.
  3. In a medium saucepan, combine avocado, chicken broth, whole milk, lemon juice, and chopped onion. Heat slowly to boiling, stirring frequently. Add chopped shrimp, along with salt and pepper. Heat through, but do not boil. Remove from heat. Adjust seasonings to taste. May be served hot or cold.

Beef and Broccoli


Ingredients:

  • 1 tablespoon olive oil
  • 1 pound round steak, thinly sliced into 2 inch pieces
  • salt to taste
  • ground black pepper to taste
  • 1 large onion, thinly sliced
  • 2 cups fresh broccoli florets, chopped
  • 1 (10.75 ounce) can condensed cream of broccoli soup
  • 1/4 cup water
  • 3 tablespoons soy sauce
  1. In a large skillet, heat the olive oil over high heat. Stir in the steak and season with salt and pepper. Cook until beef is almost completely browned.
  2. Stir in onions and saute until tender. Stir in broccoli, condensed cream of broccoli soup, water and soy sauce. Blend well.
  3. Reduce heat and cover. Cook to desired doneness.

Creamy Tilapia

This is a great way to use some frozen tilapia for a nice, quick dinner.

Ingredients:

  • 4 cloves garlic, crushed or to taste
  • 1 cup peeled, seeded, and diced tomato
  • 5 tablespoons sour cream
  • salt and pepper to taste
  • 2 tilapia fillets
  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. In a medium bowl, mash together the garlic and tomato. Stir in the sour cream and season with salt and pepper. Place the fish fillets in a shallow baking dish.
  3. Bake fish for 10 minutes in the preheated oven, until about halfway done. Remove from the oven, and pour the tomato sauce over it. Return to the oven, and cook for 10 more minutes or until fish flakes easily with a fork.

Orange Chicken

This is a recipe I found in a "Cooking Light" magazine. It sounds great.

Ingredients:

6 skinless, boneless chicken breast halves
1/4 cup all-purpose flour
1 (14.5 ounce) can chicken broth
2 teaspoons lemon juice
2/3 cup orange marmalade
1/4 teaspoon ground black pepper

Directions:

  1. Saute chicken in a large skillet until lightly browned, about 7 to 10 minutes. Remove from skillet and set aside.
  2. In a medium bowl combine the flour, broth, juice, marmalade and pepper. Mix together. Heat mixture in a medium saucepan over medium low heat, stirring constantly, until bubbly. Add chicken and cook over low heat for 4 minutes.

Sue's Chicken Noodle Soup

This is my mom's famous chicken noodle soup recipe. It always turns out great and it's especially nice in the cold winter!!!

Ingredients:

3 boneless skinless chicken breasts, chopped

1/2 onion, chopped

3 cubes chicken bullion

carrots

celery

peas (any other vegetables desired)


Directions:

Put chicken in water and onion and bullion.

Make noodles while chicken cooks. (1 egg, ½ shell milk, 1 c. flour) usually x 2

Fish out chicken, let noodles cook.

Put chicken and vegetables back in. Cook until heated through.

Serve with biscuits or over mashed potatoes!!!

Sunday Pot Roast


Ingredients:

1 beef chuck pot roast (about 2.5 lbs)

3 medium baking potatoes

2 large carrots

1 large parsnip

2 large celery stalks

1 medium onion, sliced

2 bay leaves

1 t. dried rosemary

½ t. dried thyme

½ cup beef broth

Directions:

Trim any excess fat from beef. Cut beef into serving sized pieces, season with salt/pepper. Scrub potatoes. Cut scrubbed potatoes into quarters. Cut carrots and parsnip diagonally into ¾ inch slices. Slice celery into 1-2 in. pieces.

Place potato, carrot, parsnip, celery, onion and bay leaves in slow cooker. Sprinkle rosemary and thyme over vegetables.

Arrange beef over vegetables in slow cooker. Pour broth over beef.

Cover slow cooker and cook pot roast on LOW for 8 ½ -9 hours until beef is tender.

Remove beef to large platter and arrange vegetables around beef. Serve with juices.

Salmon Supper

I got this recipe from a friend. She said that they do this all the time for a quick dinner.

Ingredients:

1 lb. can salmon

1 ½ c. cottage cheese

1 egg, slightly beaten

1 ½ c. cracker crumbs

1 c. grated cheddar cheese

1 T. chopped onion

1 T. lemon juice

½ t. salt

¼ t. pepper

Directions:

Mix cottage cheese, egg, crumbs, cheese, onion, lemon juice, salt and pepper. Add salmon. Bake in 2 quart buttered dish at 350 for 45 minutes. Makes 6-8 servings.

Chunky Potato Soup

This is another new recipe I haven't tried yet. Let me know how it goes!

Ingredients:

3 medium red potatoes

2 cups water

1 small onion

3 T butter

3 T flour

crushed red pepper flakes

ground black pepper

3 cups milk

½ t. sugar

1 c. shredded cheddar cheese

1 cup cubed cooked ham

Directions:

Peel potatoes and cut into one inch cubes. Bring water to a boil in large saucepan. Add potatoes and cook until tender Drain, reserving liquid. Set aside potatoes. Measure 1 cup cooking liquid, adding water if necessary. Set aside.

Peel and finely chop onion. Melt butter in saucepan over medium heat. Add onion to saucepan; cook, stirring frequently, until onion is translucent and tender, but not brown.

Add flour to saucepan, season with pepper flakes and black pepper to taste. Cook 3-4 minutes.

Gradually add potatoes, reserved 1 cup cooking liquid, milk and sugar to onion mixture in saucepan. Stir well. Add cheese and ham. Simmer over low heat 30 minutes, stirring frequently.

Creamed Chicken & Biscuits

I've never tried this recipe before, so if you give it a shot ... let me know how it turns out! It sounds great.

Ingredients:

½ large onion

1 1/2 t. butter

4 cups chopped, cooked chicken

1 can cream of chicken soup

½ cup milk

½ cup chopped pimiento

1 cup shredded mild cheddar cheese

6 frozen biscuits, thawed

Directions:

Preheat oven to 350. Grease bottom and sides of 11x7 baking dish.

Chop the onion. Head butter in a nonstick skilled until melted. Stir in onion. Saute until tender. Combine onion, chicken, soup, sour cream, milk and pimiento in a medium bowl and mix well. Spoon the mixture into the baking dish. Bake for 15 minutes. Remove from oven. Sprinkle baked layer with ¾ cup cheddar cheese. Arrange biscuits in single layer over top. Sprinkle with remaining cheese. Bake until biscuits are golden brown and sauce is bubbly, about 20 minutes longer. Serve immediately.

Pasta with Fresh Tomatoes

Ingredients:

1 lb. Pasta

2 cloves garlic, minced

½ c. minced basil (1 T. dried)

4 medium tomatoes, diced (1 can chopped)

2 T. lemon juice

2/3 c. olive oil

½ t. salt

¼ t. pepper

Directions:

Mix all of the ingredients, except the pasta in a medium sized glass bowl.

Cover and let sit, at room temperature, for 3-4 hours.

Cook the pasta according to the directions. Drain, combine with sauce, toss and serve. (Add cooked, cubed chicken if desired)
