Salmon Supper

I got this recipe from a friend. She said that they do this all the time for a quick dinner.

Ingredients:

1 lb. can salmon

1 ½ c. cottage cheese

1 egg, slightly beaten

1 ½ c. cracker crumbs

1 c. grated cheddar cheese

1 T. chopped onion

1 T. lemon juice

½ t. salt

¼ t. pepper

Directions:

Mix cottage cheese, egg, crumbs, cheese, onion, lemon juice, salt and pepper. Add salmon. Bake in 2 quart buttered dish at 350 for 45 minutes. Makes 6-8 servings.
